This plant-based salmon may be just the thing. It’s intended to not only appear like the genuine thing, but also cook, taste, and flake like it.
This sustainable salmon substitute from New School Foods promises to be practically indistinguishable from the genuine thing.
The business, situated in Toronto, Canada, claims to have recreated aspects of a salmon fillet such as (wait for it) ‘aligned muscle fibres, connective tissue, lipids, and other components’.
This is due to their ‘unique muscle fibre and scaffolding technology,’ according to the company.
Sounds intense, but food alternatives like this could be game-changers in sustainability, especially with over-fishing causing such havoc with ecosystems worldwide.
But for the moment, this plant-based salmon is only available for chefs to trial as part of their pilot programme.
The fillets can also transition from ‘raw’ to ‘cooked’ in the same manner as genuine fish may.
They even have the same Omega-3 levels as wild salmon.
According to the website, the product will be available in North American restaurants later this year.
